The Port of Leith Distillery set out to create the very definition of what a London Dry Gin should be; to do something very simple, but do it to perfection. With juniper at its core, they use fresh lime peel and a hint of pink peppercorns to create a classic benchmark expression that is balanced, dry and intensely refreshing.
Lind & Lime is produced in a 500 litre, electrically powered, stainless steel still. The organic grain neutral spirit and botanicals are measured out then mixed together in the still. This is left to macerate overnight, allowing the dry botanicals to rehydrate and imbue the spirit with flavour. The lime peel is added to the still before heating it up. As the spirit comes off the still, water is added to dilute it to 44% ABV before being left to settle for a couple of days.
Lind & Lime is a Scottish gin produced by The Port of Leith Distillery at the Tower Street Stillhouse in Leith, Edinburgh. The story that influenced them started in Edinburgh in 1716 when James Lind, a relatively unsung hero of the Scottish Enlightenment, was born. After some informal medical training at Edinburgh University, he joined the Royal Navy in 1738 as a Surgeons’ Mate, and by 1747 he had become Surgeon of a ship called HMS Salisbury. It was on this vessel that he conducted what is recognised today as one of the first clinical trials ever recorded, which played a significant part in the story of the prevention of scurvy. Today Lind & Lime is distilled with 100% Clean Electricity, produced with 100% organic ingredients and packaged with 100% plastic free materials.
